How To Make Vegan Gnocchi (No Eggs, Vegan)

In this video I have a guest on the show that specializes in Vegan cooking. Mitch Kinna is a vegan himself and is always looking for new ways to make vegan alternatives. This video is a step by step guide on how to make vegan gnocchi at home without using eggs.

Ingredients Needed

  • Arugula

  • 1 Medium squash

  • Flour

  • 3-4 Yukon gold potatoes

  • 1 Garlic

  • Salt

  • Pink or black peppercorn

  • White wine

  • Olive oil

  • 1 Onion (white or yellow)

  • Vio life parm (or some other parmasian alternative)

Steps To Making The Dish

  1. Put some water in a pot and bring the water to a boil.

  2. Pre heat your oven to 400F.

  3. Peel your squash so theres no skin on it.

  4. Cut the squash into even cubes.

  5. Place the squash cubes on a baking tray, then cover with oil and slight salt seasoning.

  6. Place squash in the oven, your going for a slightly brown skin. Roughly 15-20 minutes.

  7. Begine cutting your potatoes into quarters, should get 4 nice chunks (do not remove the skins)

  8. Place the cut up potatoes into the pot of boiling water and turn down the temperature to a simmer.

  9. Wrap your garlic in tin foil and place it in the oven with your squash, looking to lightly raost it.

  10. Take 2 heaping table spoons of your ground flax seed and place it in a standard bowl.

  11. Add a bit of water to the Flax seed and stir, it should look like ground up seads in a bowl.

  12. After mixing, leave the flax seed, let it sit as it will change into an egg yolk texture.

  13. Once your potatoes are cooked through, remove them from your pot. (use a fork to test the centres for doneness)

  14. Peel your potatoes and place them into your press, while pressing the potatoes you want them to be evenly spread accross your counter top.

  15. Add a bit of flour to the pressed potatoes, roughly half a cup but add as needed.

  16. Spread your flax seed mixture over the potatoes and flour.

  17. Begin mixing it together to create a nice dough.

  18. Press your dough into a nice rectangle shape.

  19. Your squash should be cooked, check for a nice baked texture then remove from the oven.

  20. Remove your garlic from the oven.

  21. Take your rectangle shaped dough and cut into strips, roughly the width of your finger.

  22. Roll the strips into nice little logs.

  23. Cut your logs into nice peices, roughly the length of your thumb.

  24. Bring your water back to a boil.

  25. While you wait for the water, dice your onion.

  26. Place your onions into a pot with a bit of olive oil and let them cook on a low heat.

  27. Place your Gnocchi into the pot of boiling water, take down the heat just a little.

  28. Your gnocchi is cooked when they float to the top.

  29. Once cooked take the gnocchi out and place on a tray with oil, make sure they don't stick to the tray.

  30. Press your garlic with your finger to push the garlic out of the skin.

  31. Season your onions with a bit of salt, we're going for a nice carmalization. (let it sit and brown)

  32. Add a bit of water to the onions, make it a nice water/oil mix.

  33. Add a bit of white wine to the onions to de glaze and pull the flavour from the pot.

  34. Add your garlic to the sauce pot.

  35. Add your squash to the sauce pot and continue to stir.

  36. Add a bit of the saved potatoe water to the souce pot.

  37. Take the sauce of the heat and blend to a nice sauce consistancy.

  38. Taste test it, then add seasoning as needed.

  39. Take your gnocchi and pan fry it to add a nice outter texture.

Plating Process

  1. Take your sauce and spread it on your plate with a spoon.

  2. Place your pan fried gnocchi on top the sauce.

  3. Sprinkle a bit of your vegan parm on top.

  4. Sprinkle a bit of your crushed pepper corn on top.

  5. Place some fresh arugula on top.

  6. Sprinkle with a bit more peppercorn.

  7. Sprinkle with a bit more vegan parm.

Your all done, congratulations you just made a vegan gnocchi!
